Healthy Yogurt Parfait

Today, I walked into my kitchen and I realized there wasn’t much there. A depressing side note, that I’d like to add, is that all my local supermarkets are either closed or have regulated hours and restrictions on purchasing of certain items, so locating ingredients has been a NIGHTMARE. Thanks, Covid-19…. I walked into my kitchen open the fridge and just stared. What am I going to eat?

My fridge was filled with condiments: Caesar dressing, stone ground mustard, bbq sauce etc… and then I saw I had yogurt. Wait, Is it expired? No!? Excellent! Ok…. so for breakfast today we will be eating yogurt and-

Wait! I think I have oats in the pantry. Wait for it… yes! I have oats. Ok…. Now didn’t I have some fruit in the freezer? Yes! Strawberries and figs?! Uhhhhhh ok.

So for breakfast today, I made a yogurt parfait with literally scraps in my entire kitchen. Literally 3 ingredients that you should already have somewhere within the four walls of your kitchen. 

From the Fridge:

1 cup of yogurt (doesn’t matter what kind here)

From the Freezer:

1 cup of fruit (doesn’t matter what variety)

From the Pantry:

1/4 cup of oats 

Dash of raw sugar on top (optional) 

Directions: Layer yogurt first, then fruit, then oats. Repeat until you have as many layers as you want.

Yep, that’s it. Just like that, breakfast is done.
