Turkey Meatloaf

Even though it’s spring time in the Mid-Atlantic, the temperature outside suggests otherwise! On a cool day like today, I decided to make something warm and satisfying.

Turkey meatloaf has been my favorite meal as it provides a lighter and healthier version of a traditionally pork and beef mixture meatloaf

From the Pantry:

2 squirts of stone ground mustard

1 cup of ketchup

1/4 cup of Parmesan Cheese

1 package of Lipton onion soup mix

1 slice of day old bread

1 tablespoon of Worcestershire sauce

From the Fridge:

1 pound of ground turkey (I used 93% lean)

1/4 cup of milk

1 small yellow onion diced

1 green pepper diced

  1. Preheat oven to 350 degrees.
  2. In a small bowl, break up 1 slice of bread with milk and let soak
  3. In another large bowl, combine ground turkey, parmesan cheese, onion, green pepper, mayo, salt and pepper to taste in a large bowl and mix well with your hands.
  4. Bake for 30 minutes and remove from the oven
  5. For the Glaze: In a small bowl, stir together the ketchup, mustard, bbq and Worcestershire sauce. Spoon over the meatloaf and return to the oven for 25-30 minutes or until loaf is cooked through.
  6. Let sit 5 minutes before slicing and serving.
